In a small bowl, combine the melted butter, minced garlic, lemon zest, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir in the chopped fresh dill or parsley. Set aside.

Prepare four large pieces of heavy-duty aluminum foil, each about 18x12 inches.

Divide the sliced zucchini, yellow squash, bell peppers, red onion, and corn evenly among the four foil pieces, centering them on each piece.

Place one salmon fillet on top of the vegetables in each foil packet. Season the salmon lightly with additional salt and pepper.

Spoon about one-quarter of the garlic herb butter mixture evenly over each salmon fillet and the surrounding vegetables.

For a spicier kick, add a pinch of red pepper flakes to the garlic butter. If you don't have a grill, you can bake these packets in a preheated 400°F (200°C) oven for 15-20 minutes. These packets can be assembled up to 24 hours in advance and stored in the refrigerator.
