In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until completely smooth and lump-free (about 1-2 minutes).

Add the granulated sugar, vanilla extract, and pinch of salt to the cream cheese. Continue beating on medium speed until the sugar is fully dissolved and the mixture is light and fluffy, scraping down the sides as needed.

In a separate, chilled large bowl, whip the very cold heavy cream on low speed, gradually increasing to high, until stiff peaks form. Be careful not to over-whip.

Gently fold about one-third of the whipped cream into the cream cheese mixture until combined. Then, gently fold in the remaining whipped cream until just incorporated and no streaks remain.

To assemble the parfaits, place a spoonful of the cream mixture at the bottom of each serving glass. Arrange a layer of fresh raspberries over the cream.

Repeat the layering process, alternating between cream and raspberries, until the glasses are full. Aim for 2-3 layers of each component.

Cover the assembled parfaits loosely with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld and the cream to set.

Before serving, optionally dust with powdered sugar, garnish with extra fresh raspberries and a sprig of fresh mint.
💡 Notes
Ensure all dairy ingredients are very cold for best whipping results. For best presentation, assemble parfaits no more than 4-6 hours in advance. Leftovers can be stored in the refrigerator for up to 2 days, though berries may soften.
