Add the almond flour, beaten egg, baking powder, xanthan gum, and salt to the melted cheese mixture. Mix well with a spoon or spatula until a shaggy dough forms.

Turn the dough out onto a piece of parchment paper or a lightly oiled surface. Knead for 1-2 minutes until the dough is smooth and uniform.

Divide the dough into 3-4 equal pieces. Roll each piece into a long, thin rope, approximately 1/2 inch in diameter.

Cut each rope into 1-inch pieces. Arrange the pretzel bites on your prepared baking sheet, leaving a small space between each.
