In a medium bowl, combine the mashed banana, Greek yogurt, vanilla extract, and maple syrup (or chosen sweetener). Stir until thoroughly combined and smooth.

Sprinkle the instant pudding mix powder over the yogurt mixture. Stir vigorously for 1-2 minutes until the powder is fully incorporated and the mixture begins to thicken. Set aside.

Prepare two tall glasses or jars (about 12-16 oz each).

Spoon about 1/4 of the banana Greek yogurt mixture into the bottom of each glass. This will be your first layer.

For a smoother base, blend the mashed banana, yogurt, vanilla, and sweetener before adding the pudding mix. These parfaits are great for meal prep and can be stored in an airtight container in the fridge for up to 2-3 days. The granola may soften over time. Feel free to add a pinch of cinnamon or nutmeg to the yogurt mixture for extra flavor!
