Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

In a medium bowl, combine cubed chicken with 1 tbsp olive oil, smoked paprika, garlic powder, oregano, 1/4 tsp salt, and 1/4 tsp black pepper. Toss to coat evenly.

In a separate large bowl, combine broccoli florets, bell pepper strips, red onion wedges, and zucchini slices. Drizzle with 1 tbsp olive oil, remaining 1/4 tsp salt, and remaining 1/4 tsp black pepper. Toss gently to coat.

Spread the seasoned vegetables in a single layer on the prepared baking sheet, leaving some space in the center. Arrange the seasoned chicken cubes evenly among the vegetables. Scatter cherry tomatoes over the pan.

Bake for 20-25 minutes, or until chicken is cooked through (internal temperature of 165°F / 74°C) and vegetables are tender-crisp and lightly caramelized. Toss ingredients halfway through cooking for even browning.
