Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until vegetables begin to soften.

Stir in minced garlic and tomato paste, cooking for another 2 minutes until fragrant, stirring constantly. Add smoked paprika, dried thyme, a pinch of salt, and black pepper. Cook for 1 minute more, allowing spices to toast.

Add chopped potatoes and the can of diced tomatoes (undrained) to the pot. Pour in the vegetable broth and nestle in the bay leaf. Stir everything to combine.

Bring the stew to a gentle boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until potatoes are fork-tender. Stir occasionally.

Remove the bay leaf. Stir in the nutritional yeast (if using) and taste the stew, adjusting salt and pepper as needed. If desired, mash a few potato pieces against the side of the pot to slightly thicken the stew.

Ladle into bowls and garnish with fresh chopped parsley or dill, if using. Serve hot.
💡 Notes
For a thicker stew, gently mash some of the tender potatoes against the side of the pot. Leftovers store well in an airtight container in the fridge for up to 4-5 days, or in the freezer for up to 3 months. This stew is fantastic served with crusty bread.
