For the Edamame & Herb Dip: If using frozen edamame, blanch in boiling water for 3-5 minutes until tender-crisp. Drain well and let cool slightly.

In a food processor, combine the shelled edamame, fresh parsley, fresh dill, minced garlic, lemon juice, tahini, water, 1/2 tsp sea salt, and 1/4 tsp black pepper.

Process until completely smooth, scraping down the sides as needed. Add more water, one tablespoon at a time, until you reach your desired creamy consistency. Taste and adjust seasonings.

Transfer the edamame dip to a serving bowl. Drizzle with a little olive oil and sprinkle with red pepper flakes, if using. Set aside.

For the Spiced Chickpea & Almond Flour Crackers: Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper.

In a medium bowl, whisk together the chickpea flour, almond flour, nutritional yeast, dried rosemary, smoked paprika, garlic powder, onion powder, 1/4 tsp sea salt, and cayenne pepper (if using).

Pour in 2 tablespoons of olive oil and stir until the mixture resembles coarse crumbs. Gradually add the cold water, one tablespoon at a time, mixing until a cohesive, firm but not sticky dough forms.

Cover the bowl and let the dough rest for 15 minutes.

Place the dough between two sheets of parchment paper. Using a rolling pin, roll the dough out as thinly as possible (about 1/16th of an inch thick).

Carefully peel off the top layer of parchment paper. Score the dough into desired cracker shapes using a knife or pizza cutter. Sprinkle liberally with flaky sea salt.

Transfer the baking sheet to the preheated oven and bake for 20-25 minutes, or until the crackers are golden brown and crisp. Check them often to prevent burning.

Let the crackers cool completely on the baking sheet. Once cool, they will easily snap apart along the scored lines.

💡 Notes
For the edamame dip, you can substitute other fresh herbs like cilantro or basil. The crackers are best stored in an airtight container at room temperature for up to a week.
