👩🍳 Instructions
-
1
Add cottage cheese, cocoa powder, maple syrup, vanilla extract, and salt to a high-speed blender or food processor. If liquid is needed to blend, add 1-2 tablespoons of milk.
-
2
Blend on high until completely smooth and creamy, scraping down the sides as necessary. Ensure no curds remain for a truly velvety texture. This may take 1-2 minutes.
-
3
Taste the mousse and adjust sweetness or chocolate intensity as desired by adding more maple syrup or cocoa powder. Blend again briefly to incorporate.
-
4
Pour the mousse into two small ramekins or dessert bowls. Cover with plastic wrap and refrigerate for at least 30 minutes, or preferably 1-2 hours, to allow it to firm up and flavors to meld. For best results, chill overnight.
-
5
Serve chilled, optionally topped with fresh berries, a sprinkle of flaky sea salt, or a dollop of whipped cream.
💡 Notes
For an even richer flavor, use dark cocoa powder. If using a sugar-free sweetener, adjust amounts according to package instructions for equivalent sweetness. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
