In a large bowl, whisk together the almond flour, coconut flour, baking powder, salt, and black pepper until well combined.

In a separate medium bowl, whisk the eggs, milk, and melted butter (or oil) until smooth.

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few small lumps are fine.

Gently fold in the diced ham and shredded cheddar cheese until evenly distributed throughout the batter.

Ladle approximately 1/2 cup of batter onto the hot waffle iron (or the amount recommended by your waffle maker). Close the lid and cook for 3-5 minutes, or until the waffles are golden brown and crispy, and the steam has largely subsided.

Carefully remove the cooked waffles and serve immediately. Repeat with the remaining batter.
💡 Notes
These waffles are fantastic on their own, but also pair well with a fried egg, a dollop of Greek yogurt, or a dash of hot sauce. For meal prep, cook a larger batch, cool completely, and store in the fridge for up to 4 days or freeze for up to 2-3 months. Reheat in a toaster, oven, or waffle iron for best results.
