Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add chicken in a single layer (cook in batches if necessary). Cook for 4-5 minutes, stirring occasionally, until golden brown and cooked through. Remove chicken to a plate and set aside.
