👩🍳 Instructions
-
1
Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish or line it with parchment paper.
-
2
In a large bowl, thoroughly mash the ripe bananas until mostly smooth. The riper the bananas, the easier this will be.
-
3
Add the rolled oats to the mashed bananas and stir well with a spatula until all the oats are evenly coated.
-
4
Gently fold in the fresh or frozen blueberries. Be careful not to overmix, especially if using fresh berries, to keep them intact.
-
5
Pour the mixture into the prepared baking dish and spread it evenly using the back of a spoon or a spatula.
-
6
Bake for 25-30 minutes, or until the edges are golden brown and the center appears set. A toothpick inserted into the center should come out mostly clean.
-
7
Remove the dish from the oven and let the bars cool completely in the pan on a wire rack before attempting to slice them. This step is crucial for them to hold their shape.
-
8
Once cooled, slice into 9 squares and serve. Enjoy them warm or at room temperature.
💡 Notes
For a little extra flavor, you can add 1/2 teaspoon of cinnamon or a splash of vanilla extract to the mixture. These bars store well in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days. For longer storage, freeze individual bars for up to 3 months. Thaw overnight in the fridge or microwave for 30-60 seconds.
