Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper or a silicone baking mat.

In a small bowl, gently stir the cottage cheese. If using, add garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until just combined.

Using a spoon, drop 1-tablespoon sized dollops of cottage cheese onto the prepared baking sheet. Spread each dollop into a thin, even layer, about 2-3 inches in diameter. Ensure there's space between each chip.

Bake for 30-45 minutes, or until the chips are golden brown around the edges and appear dry and firm in the center. Baking time will vary based on thickness and oven. Keep a close eye on them to prevent burning.

Remove the baking sheet from the oven and let the chips cool completely on the sheet. They will crisp up further as they cool. Once cool, carefully peel them off the parchment paper and enjoy!
💡 Notes
For extra flavor, sprinkle with everything bagel seasoning or finely grated Parmesan cheese before baking. Store cooled chips in an airtight container at room temperature for up to 4 days. Re-crisp in a low oven if they soften.
