Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper or a silicone baking mat.

Optional but recommended: Place the cottage cheese in a fine-mesh sieve set over a bowl and allow it to drain for 10-15 minutes to remove excess liquid.

Transfer the drained cottage cheese to a small bowl. Add salt and your chosen seasonings. Stir gently to combine.

Using a small spoon, drop 1-tablespoon dollops of seasoned cottage cheese onto the prepared baking sheet. Leave about an inch of space between each dollop.

Using the back of the spoon, spread each dollop as thinly as possible into a circular or irregular chip shape. The thinner you spread them, the crispier they will become.

Bake for 30-45 minutes, or until the cottage cheese chips are deeply golden brown, firm, and completely crisp. Baking time will vary based on thickness and oven. Begin checking for doneness after 25 minutes. If they are still soft, continue baking.

Once baked, remove the baking sheet from the oven and immediately transfer the chips to a wire rack to cool completely. They will continue to crisp as they cool.

Serve immediately or store in an airtight container at room temperature for up to 3 days.
💡 Notes
Experiment with different seasonings like dried dill, onion powder, or a dash of cayenne pepper. For best results, use full-fat cottage cheese and ensure the chips are spread very thinly. If chips lose crispness, re-bake at 250°F (120°C) for 5-10 minutes.
