Prepare the garlic butter: In a small bowl, combine softened butter, minced garlic, chopped parsley, chives (if using), ½ tsp sea salt, ¼ tsp black pepper, and red pepper flakes (if using). Mix well until fully incorporated. Set aside.

Prep the steak: Remove steaks from the refrigerator 30-45 minutes before grilling to bring them to room temperature. Pat them completely dry with paper towels. Drizzle with 1 tbsp olive oil, then generously season both sides with 1 tsp coarse sea salt and ½ tsp black pepper.

Prepare the asparagus: Snap off the woody ends of the asparagus. Toss with 1 tbsp olive oil, ¼ tsp sea salt, and ⅛ tsp black pepper. Set aside.

Preheat grill: Preheat your grill to high heat (450-500°F / 230-260°C).

Grill the steak: Place steaks on the hot grill grates. Grill for 3-5 minutes per side for medium-rare (130-135°F / 54-57°C internal temperature), or 5-7 minutes per side for medium (135-140°F / 57-60°C). Flip only once. During the last 5-7 minutes of steak cooking, add the asparagus to the grill.

Grill asparagus: Place asparagus directly on the grill grates. Grill, turning occasionally, until tender-crisp and slightly charred, about 5-8 minutes.

Rest the steak: Once steaks reach desired doneness, remove them from the grill. Immediately place a generous pat (1-2 tbsp per steak) of the prepared garlic butter on top of each steak. Transfer to a cutting board and tent loosely with foil. Let rest for 5-10 minutes.

Slice and serve: Slice the rested steaks against the grain into thick pieces. Arrange on plates with the grilled asparagus. Spoon any melted garlic butter and pan juices from the cutting board over the steak and asparagus. Serve immediately.
💡 Notes
For best results, use fresh, high-quality ingredients. The garlic butter can be made several days ahead. Resting the steak is crucial for juiciness. If you don't have a grill, a screaming hot cast iron skillet works wonderfully, finishing the steaks in a preheated oven.
