1
First, prepare the tzatziki: In a medium bowl, combine Greek yogurt, grated and squeezed cucumber, 1 minced garlic clove, fresh dill, optional fresh mint, and lemon juice. Season with salt and pepper to taste, then stir well. Refrigerate while you cook.
-
2
Heat olive oil in a large skillet over medium-high heat. Add chopped yellow onion and cook until softened, about 3-4 minutes.
-
3
Add ground beef to the skillet, breaking it up with a spoon. Cook until browned and no pink remains, then drain any excess fat.
-
4
Stir in the remaining 1 minced garlic clove, ground cumin, smoked paprika, dried oregano, and optional red pepper flakes. Cook for 1 minute until fragrant, stirring constantly.
-
5
Season the beef with salt and pepper, then remove from heat and stir in fresh parsley.
-
6
Warm pita breads in a dry skillet, toaster oven, or microwave until pliable, about 15-30 seconds per side. Carefully cut each pita in half to form a pocket.
-
7
Spread a generous amount of tzatziki inside each warm pita pocket. Fill with the seasoned ground beef, shredded lettuce, diced cucumber, and halved cherry tomatoes.
-
8
Top with crumbled feta cheese and serve immediately. Enjoy your quick and flavorful Mediterranean Ground Beef Pita Pockets!
π‘ Notes
For a vegetarian option, substitute ground beef with seasoned chickpeas or lentils. Tzatziki can be made up to 2 days in advance. To prevent soggy pitas, assemble just before serving.
