Prepare the Chicken: In a medium bowl, whisk together 1/4 cup olive oil, 3 tbsp lemon juice, 2 cloves minced garlic, 1 tbsp dried oregano, 1 tsp dried thyme, 1/2 tsp salt, 1/4 tsp black pepper, and optional red pepper flakes. Add the cubed chicken, toss to coat, cover, and refrigerate for at least 30 minutes, or up to 4 hours.

Make the Whipped Feta Dip: In a food processor, combine crumbled feta, softened cream cheese, Greek yogurt, 2 tbsp olive oil, 1 tbsp lemon juice, optional 1 clove minced garlic, and a pinch of dried oregano. Process until completely smooth and creamy, scraping down sides as needed. Season with black pepper to taste. Transfer to a serving bowl, cover, and refrigerate until ready to use.

Grill the Chicken: Preheat your grill or grill pan to medium-high heat and lightly oil the grates. Thread marinated chicken onto skewers (if using wooden skewers, soak them first). Cook chicken for 3-4 minutes per side, turning occasionally, until cooked through (internal temperature 165°F / 74°C) and nicely charred. Remove from heat and let rest for a few minutes.

Assemble the Grazing Board: Arrange the grilled chicken skewers or individual pieces on a large platter or cutting board. Place the bowl of whipped feta dip prominently. Arrange the sliced cucumbers, halved cherry tomatoes, sliced red onion, and Kalamata olives around the chicken and dip. Tuck in the warm pita triangles.
