In a large mixing bowl, combine the chocolate protein powder and unsweetened cocoa powder. Whisk gently to combine and remove any lumps.

Add the ice-cold water or milk to the dry ingredients. Begin whipping with an electric mixer (whisk attachment) on medium-high speed until frothy.

While continuing to whip, slowly sprinkle in the xanthan gum. Increase speed to high and whip for 3-5 minutes, or until the mixture is very thick, airy, and significantly increased in volume. It should resemble a soft meringue.

Gently fold in the Greek yogurt and maple syrup (or your chosen sweetener) using a spatula. Be careful not to deflate the fluff too much.

Carefully fold in most of the mixed berries, reserving some for garnish.

Divide the protein fluff into two bowls. Garnish with the remaining fresh berries and serve immediately to enjoy its light and airy texture.
💡 Notes
For best results, consume immediately. If storing, the fluff will become denser but will still be tasty. Adjust sweetener to your personal preference and the sweetness of your protein powder. For a richer flavor, use full-fat Greek yogurt.
