Preheat your grill to medium-high heat (around 400°F / 200°C) or your oven to 400°F (200°C).

Prepare four large pieces of heavy-duty aluminum foil (about 12x12 inches each).

Pat salmon fillets dry with paper towels. Season both sides with salt and pepper.

Place one salmon fillet in the center of each foil square. Drizzle each fillet with 1/2 tablespoon of olive oil.

Evenly distribute minced garlic over the salmon. Top each fillet with lemon slices, chopped fresh dill, and fresh parsley. If using, sprinkle a pinch of red pepper flakes.

Bring the long sides of the foil together over the salmon and fold them down tightly to create a seam. Then, fold the short ends inward, crimping securely to seal each packet completely.

Carefully place the sealed foil packets directly on the preheated grill grates or on a baking sheet if using the oven.

Grill or bake for 12-18 minutes (grill) or 15-20 minutes (oven), depending on the thickness of the salmon. The salmon is cooked through when it flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

Carefully remove packets from the grill or oven (watch for hot steam when opening!). Drizzle with fresh lemon juice before serving.

Serve immediately with your favorite sides.

Feel free to experiment with other herbs like thyme or oregano. You can also add thin slices of vegetables like zucchini or bell peppers to the packets for a complete meal. Ensure foil packets are tightly sealed to prevent steam from escaping, which helps keep the salmon moist.
