In the bowl of a food processor, combine the pitted dates, unsweetened cocoa powder, and optional sea salt. Pulse several times until the dates begin to break down and mix with the cocoa powder.

Add the almond flour and optional vanilla extract to the food processor. Process continuously, scraping down the sides of the bowl as needed, until the mixture comes together into a thick, cohesive dough. It should be sticky but firm enough to roll. If too dry, add 1 tsp of water or plant milk at a time until desired consistency is reached. If too wet, add a touch more almond flour.

Scoop out tablespoon-sized portions of the dough and roll them between your palms to form neat, round balls.

Place the formed no-bake brownie bites on a parchment-lined plate or tray. Refrigerate for at least 30 minutes to allow them to firm up before serving.

Store leftover no-bake brownie bites in an airtight container in the refrigerator for up to 7-10 days. For an extra fudgy texture, you can add 1 tbsp of melted coconut oil or nut butter to the food processor. Try rolling them in extra cocoa powder, shredded coconut, or finely chopped nuts for an added touch.
