In a large bowl, combine ground beef, grated onion, minced garlic, chopped parsley, smoked paprika, ground cumin, ground coriander, cayenne pepper (if using), salt, black pepper, and 1 tablespoon olive oil. Mix thoroughly with your hands until all ingredients are well combined and the mixture is cohesive. Be careful not to overmix.

Lay one flour tortilla on a clean work surface. Spread a thin, even layer of the spiced beef mixture over the entire surface of the tortilla, almost to the edges. Aim for about 1/8 to 1/4 inch thickness.

Place another tortilla directly on top of the beef-covered tortilla, pressing gently to adhere. Repeat this layering process with meat and tortillas until you have a stack of 4-5 tortillas with meat in between each layer. Finish with a plain tortilla on top.

Using a sharp knife, carefully trim off the very edges of the stacked tortillas to create neat, straight sides. Then, cut the stack into chunky rectangles, approximately 1.5 to 2 inches wide and 3-4 inches long.

Carefully thread two of these rectangular pieces onto each skewer, making sure the skewer passes through all layers of tortilla and meat to hold them securely. Leave a little space between the pieces on the skewer.

Preheat your grill to medium-high heat (400-450°F / 200-230°C). Lightly oil the grill grates to prevent sticking.

Place the prepared skewers on the hot grill. Cook for about 4-6 minutes per side, rotating them every few minutes, until the tortillas are golden brown and slightly crispy, and the internal temperature of the beef reaches 160°F (71°C). Watch carefully to prevent burning.

Remove the skewers from the grill and let them rest for 5 minutes before serving. Serve hot, optionally with your favorite dipping sauce.
💡 Notes
Ensure your grill is clean and well-oiled to prevent sticking. For a spicier kick, add extra cayenne pepper or a pinch of red pepper flakes to the meat mixture. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or air fryer for best results.
