In a large bowl, combine ground beef, grated onion, minced garlic, chopped parsley, smoked paprika, cumin, oregano, cayenne (if using), salt, and black pepper. Mix thoroughly with your hands until well combined but do not overmix.

Lay one flour tortilla flat. Spread a thin, even layer of the spiced beef mixture over the entire surface, almost to the edges (about 1/8 to 1/4 inch thick).

Place another tortilla directly on top of the beef layer, pressing gently to adhere. Repeat this process, alternating beef and tortilla layers, until you have 3-4 layers of beef and 3-4 tortillas stacked, finishing with a tortilla on top.

Using a sharp knife, carefully cut the layered stack into rustic rectangles, approximately 1.5 to 2 inches wide and 3-4 inches long.

Carefully thread 2-3 of these layered rectangles onto each skewer, ensuring they are snug but not overly compressed. Leave a little space between each piece for even cooking.

Preheat your grill to medium-high heat (400-450°F / 200-230°C). Clean and lightly oil the grill grates to prevent sticking.

Brush the assembled skewers lightly with olive oil on all sides.

Place the skewers directly on the preheated grill grates. Grill for 3-5 minutes per side, turning occasionally, until the tortillas are golden brown and slightly charred in spots, and the beef is cooked through (internal temperature of 160°F / 71°C).

Remove from the grill and let rest for a few minutes before serving. Serve hot with your favorite dips or sides.
💡 Notes
For best results, use lean ground beef (80/20) for juiciness. If using wooden skewers, remember to soak them in water for at least 30 minutes before grilling to prevent burning. Keep an eye on the tortillas as they can brown quickly.
