In a medium bowl, combine the cottage cheese, dried herbs, garlic powder, smoked paprika, salt, and pepper. Stir thoroughly until all the seasonings are evenly distributed throughout the cottage cheese.

Spoon small dollops (about 1-2 tablespoons each) of the seasoned cottage cheese onto the prepared baking sheet. Using the back of a spoon or a small offset spatula, gently spread each dollop into a very thin, even layer, aiming for circles about 2-3 inches in diameter. Ensure they are not touching each other.

Bake for 30-40 minutes in the preheated oven. The exact timing will depend on your oven and how thinly the cheese was spread. After about 20-25 minutes, the edges should start to look golden and the chips should be firm enough to flip. Carefully flip each chip with a thin spatula if desired, and continue baking for another 10-15 minutes, or until both sides are deeply golden brown and very crispy. They should feel brittle.

Remove the baking sheet from the oven and transfer the crispy cottage cheese chips to a wire rack to cool completely. They will continue to crisp up as they cool.

For extra crispiness, ensure the cottage cheese is spread as thinly as possible. If the chips lose their crunch after storage, you can re-crisp them in a 150°C (300°F) oven for 5-10 minutes. Feel free to experiment with different spice blends like chili powder, onion powder, or a sprinkle of nutritional yeast for a cheesy umami kick.
