While potatoes roast, heat 1 tbsp olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned (6-8 minutes). Drain excess fat.

Reduce heat to medium. Add diced onion to skillet and cook until softened (about 5 minutes). Stir in minced garlic and cook for 1 minute until fragrant.

Stir in diced tomatoes (undrained), Worcestershire sauce, oregano, smoked paprika, ½ tsp salt, and ¼ tsp black pepper. If desired, add beef broth for a richer sauce.

Bring to a gentle simmer, then reduce heat to low, cover, and cook for 10-15 minutes, allowing flavors to meld.

About 10 minutes before serving, place broccoli florets in a steamer basket over a pot with ¼ cup water. Cover and steam for 5-7 minutes, until tender-crisp. Sprinkle with a pinch of salt.

Serve the savory ground beef alongside the herb-roasted potatoes and steamed broccoli. Garnish with fresh parsley.

For extra crispiness, ensure potatoes are in a single layer and oven is preheated. Ground beef can be prepared a day ahead. Leftovers store well for 3-4 days in airtight containers.
