Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.

In a medium bowl, combine the almond flour, optional salt, and any desired dry seasonings. Whisk well to combine.

Add 3 tablespoons of filtered water to the flour mixture. Mix with a spatula or your hands until a cohesive dough forms. If the dough is too dry, add water 1/2 teaspoon at a time until it comes together. It should be pliable, not sticky.

Place the dough ball onto the prepared parchment paper. Place another piece of parchment paper on top of the dough. Using a rolling pin, roll the dough out as thinly and evenly as possible, aiming for about 1/16 to 1/8 inch thickness. The thinner it is, the crispier your crackers will be.

Remove the top piece of parchment paper. Use a pizza cutter or a sharp knife to score the dough into your desired cracker shapes (squares, rectangles). Do not separate them yet.

If using, sprinkle any coarse seasonings (like coarse sea salt or sesame seeds) over the scored dough and gently press them in with the rolling pin.

Carefully slide the parchment paper with the scored dough onto the baking sheet.

Bake for 10-15 minutes, or until the edges are lightly golden brown and the crackers appear firm. Keep a close eye on them, as almond flour can brown quickly.

Remove from the oven and let the crackers cool completely on the baking sheet on a wire rack. They will crisp up further as they cool. Once cool, break them apart along the scored lines.

Store in an airtight container at room temperature for up to a week. Re-crisp in a 300°F (150°C) oven for 5-7 minutes if needed.

Ensure you use super-fine blanched almond flour, not almond meal, for the best texture. Roll the dough as thin as possible for ultimate crispiness. Feel free to customize with your favorite low-carb seasonings like garlic powder, onion powder, or a sprinkle of everything bagel seasoning.
