Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.

Reduce heat to medium. Add diced onion to the skillet with the beef and cook until softened, about 3-4 minutes. Stir in minced garlic, cumin, paprika, oregano, salt, and black pepper. Cook for 1 minute more until fragrant.

While the beef cooks, warm the pita breads. You can do this in a dry skillet for 30 seconds per side, in the microwave for 15-20 seconds, or briefly in a toaster oven until soft and pliable.

Carefully cut each warm pita in half to create a pocket. Spoon a generous amount of the seasoned ground beef into each pita half.

Fill the pockets with shredded lettuce, diced tomatoes, and diced cucumbers. Drizzle generously with Tzatziki sauce and sprinkle with crumbled feta cheese and fresh chopped parsley.
