Ensure your Medjool dates are pitted. If they are not soft and pliable, soak them in warm water for 5-10 minutes, then drain thoroughly.

Add the raw almonds or walnuts to a food processor. Pulse several times until finely chopped, but not yet a paste.

Add the pitted dates and unsweetened cocoa powder to the food processor with the nuts.

Process on high, scraping down the sides as needed, until a sticky, cohesive dough forms. It should come together and hold its shape when pressed.

Scoop out about 1 tablespoon of the mixture at a time and roll it between your palms to form small, bite-sized balls.

Place the finished brownie bites on a plate or in an airtight container. Chill in the refrigerator for at least 30 minutes to firm up before serving. Store any leftovers in the refrigerator.
💡 Notes
For an extra flavor boost, add a pinch of sea salt or 1/2 teaspoon of vanilla extract to the food processor. You can also roll the finished bites in shredded coconut or extra cocoa powder for a different coating. If the mixture is too sticky to roll, chill it briefly before shaping.
