In a large bowl, combine pork cubes with olive oil, soy sauce, garlic powder, onion powder, and black pepper. Toss to coat evenly. Marinate in the refrigerator for at least 30 minutes, or up to 2 hours.

While pork marinates, soak wooden skewers in water for at least 30 minutes, if using.

Thread the marinated pork, pineapple chunks, red bell pepper, and red onion pieces onto the skewers, alternating the ingredients.

Preheat your grill to medium-high heat (375-400°F / 190-200°C). Clean and lightly oil the grill grates.

Place the assembled skewers on the hot grill. Cook for 10-12 minutes, turning every 2-3 minutes, until the pork is cooked through and vegetables are tender-crisp with good char marks.

During the last 3-4 minutes of cooking, generously brush the skewers with BBQ sauce. Continue to turn and baste until the sauce is caramelized and sticky.

Remove skewers from the grill and let them rest for 5 minutes before serving for optimal juiciness.
💡 Notes
For extra flavor, consider adding a pinch of red pepper flakes to the marinade. These skewers are also fantastic served with cilantro-lime rice or a fresh coleslaw. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently in a microwave or oven.
