In a medium bowl, combine the cottage cheese, garlic powder, onion powder, smoked paprika, black pepper, and a pinch of salt. Mix gently until all the spices are evenly distributed. If using fresh herbs or Parmesan, stir them in now.

Spoon the seasoned cottage cheese onto the prepared baking sheet. Using the back of a spoon or an offset spatula, spread the cottage cheese into a very thin, even layer. The thinner you spread it, the crispier your chips will be. Aim for an almost translucent layer in some spots. If desired, sprinkle with Everything Bagel Seasoning.

Transfer the baking sheet to the preheated oven and bake for 30-40 minutes, or until the cottage cheese is deeply golden brown and firm to the touch. Baking time can vary based on oven and thickness.

Once baked, remove the baking sheet from the oven. Allow the cottage cheese to cool completely on the baking sheet. As it cools, it will become incredibly crispy. Do not attempt to remove it while warm.

Once fully cooled, gently break the large golden sheet into smaller chip-sized pieces. Serve immediately or store for later.

For best results, use full-fat cottage cheese for maximum crispness and flavor. Ensure the cottage cheese is spread very thinly and allowed to cool completely on the baking sheet. Store in an airtight container at room temperature for up to 3-5 days. If they lose crispness, reheat briefly in a 300°F (150°C) oven for 5-10 minutes.
