In a medium-sized mixing bowl, whisk together the chocolate protein powder, unsweetened cocoa powder, and salt until thoroughly combined.

Slowly pour about half of the milk into the dry mixture, whisking continuously until a smooth paste forms. Add the remaining milk and your chosen sweetener, whisking until well incorporated.

Transfer the chocolate mixture to a small saucepan. Heat over medium-low heat, stirring constantly with a whisk, for 5-7 minutes, or until the pudding begins to thicken to your desired consistency and coats the back of a spoon. Be careful not to boil vigorously.

Remove from heat and pour the warm pudding into individual serving cups or a larger bowl. Cover the surface directly with plastic wrap to prevent a skin from forming, then refrigerate for at least 2-3 hours, or until thoroughly chilled and set.

For an extra rich flavor, add a splash of vanilla extract or a tiny bit of instant espresso powder. Adjust sweetener to taste. Store in an airtight container in the refrigerator for up to 4-5 days.
